Nestled in the heart of Haute Provence, Domaine Salvator combines tradition, passion and innovation. Heirs to a family tradition, Sophie and Isabelle Pinatel value the authenticity and quality of their products.
A family business
Sophie, an olive grower since 2008, explains: "With my cousin Frédéric, we are the 5th generation to work the olive trees in the Salvator countryside." With 12 trees on 000 hectares, the estate produces between 40 and 200 tons of organic olive oil each year. This production is entirely carried out on site, thanks to their own mill created in 250, allowing them total independence "from the tree to the bottle".
The art of olive oil
With each harvest, olive oil reveals unique flavors. “We have two ways of making olive oil. Either the olives are pressed on the day of the harvest to have what is called “green fruitiness”, herbaceous with a hint of spiciness and bitterness, or the olives are stored for about ten days before being pressed to pre-candied them. This is what we call “matured olive” or “black fruitiness”. This gives a different taste to the oil, very fruity and quite long in the mouth,” explains Sophie. Innovation and originality are also part of their approach, with a range of 100% natural aromatic oils, where the aromas are crushed directly with the olives or infused.
Our aromatic oils are very original, especially our smoked oil which we prepare in our own smokehouse.
Buckskin
A new space to promote local produce
Since May 2024, Isabelle, manager of the mill shop, has overseen the creation of a renovated and friendly sales area. “We created this new shop to make the welcome much more pleasant for our customers,” she explains. The shop offers olive oils from the estate, but also local products carefully selected for their quality and uniqueness. “We tasted everything, tested everything before putting it on sale,” explains Isabelle, keen to offer an authentic experience to visitors.
100% local
The store only offers products from the Alpes de Haute Provence and some products from the Hautes Alpes.
Character products and an oil bar
Domaine Salvator produces 4 vintages: Cuvée Paradis and Cuvée Durance for the “green fruity” and Cuvée Vieux Oliviers and Cuvée Légende for the “Black Olive tastes”, all AOP Provence or Haute-Provence. “We produce different varieties of olives, this allows us to make blends except for the AOP Haute Provence which is single-variety”, confides Isabelle, proud to offer exceptional products to customers. An “oil bar” also allows visitors to taste these different vintages to appreciate all their nuances.
An area prized by starred chefs
Domaine Salvator oils are highly prized by restaurateurs and especially starred chefs!
“Our oil is very popular with the region’s star chefs, who even serve it at the table!” explains Isabelle.
Le Chief Gleize de The Right Step uses our olive oils a lot, especially the Vintage Old Olive Trees ", mentions Isabelle, emphasizing the pride of being associated with renowned gastronomic establishments. This recognition, both local and national, testifies to the excellence of their products, created with passion and patience.
Sustainable and innovative know-how
The Salvator estate promotes the circular economy, working sometimes with The Biscuit Box for a chocolate with olive oil, sometimes with the Manon House for a nougat made with almonds from the Domaine.
“We also have olive oil-based soaps made with our vat dregs. These are cold saponified soaps by a local soap maker. Nothing is wasted!” Isabelle enthuses. In their quest for innovation, the Pinatel family turned to beekeeping, having already produced flower honey thanks to their first hives. The objective is clear: to diversify while remaining faithful to their vision of quality and authenticity.
A commitment to authenticity and diversity
At Domaine Salvator, the emphasis is on quality and the promotion of the terroir. For Sophie and Isabelle Pinatel, each product, whether olive oil, almonds or honey, is a tribute to the richness of Haute Provence. Their approach, combining tradition and innovation, perfectly illustrates the spirit of their estate: preserving ancestral know-how while meeting the expectations of today's customers.
